taco tuesday – hillbilly edition

it’s not uncommon for small towns in texas to have excellent taco joints…

…typically mom and pop joints, they’re a nice break from fast food and bar-b-que. most of the staff won’t speak english, they’ve been there forever, and have questionable citizenship backgrounds. but the food it awesome, and the atmosphere is undeniably mexican. it’s an oasis for latin-x folk to feel a bit of their own culture while they enjoy a night out or a beer after work, or some quick grab and go breakfast tacos.

but, every now and again, the hillbilly set gets that craving, too…
