the last of the turkey leftovers

the first ever mccauley house turkey day went well…

…and produced a metric shit ton of leftovers. we bought our grub from chisolm trail bbq in lockhart (“where the locals eat” it says on their shirts, and they’re not bullshitting) and for sixty bucks (all in) we got a 13×9 pan of fresh cornbread stuffing, a big gulp of gravy, and an eleven pound turkey slow-smoked, sliced, and de-boned. we just got the rest at the store and the feast was on! the problem is, we had five people in attendance and easily eight people’s worth of food. i’ve never been a “normal guy”, and the same can be said for the way i handle my thanksgiving leftovers. here’s a list of the happened and almost happened…

turkey & stuffing sliders – this was a “i want something quick and painless” drunken call on thanksgiving night (a large portion of the weekend was also fueled by cranberry vodka) – i took a couple of the leftover dinner rolls, added a dollop of stuffing, some turkey, and gravy. not bad.

smoked turkey & oaxaca quesadillas – this was black friday lunch. fresh flour tortillas, finer diced turkey, and oaxaca cheese. only thing missing was tequila guacamole, and i was NOT braving the store that day just to buy a fucking avocado…

white pizza – smoked turkey meets smoked provolone on a nice crust with some basil alfredo sauce. good shit, and sadly the last of what happened with the meat because…

the three previous dishes i did, and then the ufc decided to take a turn. she had plans, i had plans, but all plans were thwarted by our house idiot (he writes this column) deciding to leave the turkey in the foil pan with foil loosely chunked on top of it versus putting it in a zip lock bag on turkey day where it would still be good as of you reading this…

turkey enchiladas – smoked turkey, queso oaxaca and queso quesadilla with verde sauce and corn tortillas. sound yummy? i bet it woulda been if some idiot hadn’t let the turkey go bad improperly stored in the fridge. spoiler alert – i am that idiot.

turkey, egg, & cheese breakfast tacos – these are actually a holiday staple for me, except it’s usually grandma’s turkey that comes home, not that über tasty smoked stuff i had this year. see previous idiot comment.

last supper – this is another of my holiday traditions, usually one week after turkey day, where i re-create the bulk of the meal (turkey, stuffing, gravy, cranberry sauce) one week later. typically this is the last of the leftovers. typically it’s not ruined by (see previous idiot comment).

it was a good deal and great food – we WILL re-do this next year, and it WILL be in a fucking ziplock bag before the sun sets on turkey day. say what you want about me, i typically learn from my mistakes…
